This is only a possibility but it looks more than coincidental:
1861: Aldergate St, Tamworth. Josh Hartshorn 40 Coal miner, Hannah Hartshorn 39, Jane Hartshorn 16 b:B'ham, Eliza Hartshorn 13
1871: Pump Tavern, Albion St, Pendlebury, Lancs. Joseph Hartshorn 52 Licensed Beerseller, Hannah Hartshorn 49 (all neighbours: coal miners)

Another possibility is that Hannah is the wife/widow of another son of Samuel & Ann, if the marriage record for her son George is truthful then his name was also George and was a miner. . It opens the way to explaining why in '51 Hannah is described as a 'widow' (a George Leek did die in Q1 of 1851 but we have no way of knowing if that was this George) and gives more opportunity to explain why Joseph Hartshorn is described as her 'nephew' (could Hannah be the sister of Joseph's father Samuel or mother Elizabeth Evans?). Against this is that no father's name is given on the children's baptismal records and the fact that he is missing from the '41 census.
